HEALTHY FRESH FRUIT AND COCONUT MILK MAKE THESE CREAMSICLES A NUTRITIOUS TREAT
INGREDIENTS – makes about 10 bars
2C Unsweetened Coconut Milk like SoDelicious brand – should be no more than 50 calories per cup
2C Fresh fruit like organic berries alone or mixed including blueberries, strawberries, raspberries, and blackberries
Fresh bananas, pineapple, kiwi, watermelon, peaches, guava, etc.
2T Lime or lemon juice, fresh squeezed
1T Guar Gum – an all natural ingredient made from the guar bean used in commercial frozen items to soften so you can bite into them
DIRECTIONS: In a blender mix the coconut milk, fruit, and lemon or lime juice. Blend until smooth. Pour into frozen popsicle maker and freeze 4-6 hours or until frozen solid. If creamsicles do not release easily from the mold then run warm water over them to release.
NOTE: The natural sugar in the fruit should be sweet enough. If you absolutely must sweeten then use 100% natural liquid Stevia to taste or 100% natural Stevia powder from the Health Food Store. Stevia sold in the grocery store is processed with harmful chemicals and contains added fillers.
